HACCP Software

HACCP stands for Hazard Analysis Critical Control Point. It is an internationally recognised food safety management system and most food businesses in the UK are now required by law to have such a system in place. Many food business managers find that a computer system using HACCP Software is the most convenient way of meeting this new legal requirement.

To be able to produce a functioning HACCP system, any HACCP Software must be able to produce a food safety management system that complies with the 7 HACCP principles as set down by a body known as the Codex Alimentarius Commission. Codex Alimentarius is a food standard setting agency jointly funded by The Food and Agriculture Organisation of the United Nations and the World Health Organisation.

The seven HACCP principles are: Identify any food hazards in the food business, determine the critical control points, establish critical limits, establish a monitoring system at the critical control points, establish corrective action to be taken when monitoring, establish procedures for verification to confirm the HACCP system is working effectively and establish documentation for all procedures and appropriate records.

HACCP Software must be sophisticated enough to take account of the particular nature of an individual food business and identify the inherent critical control points in that operation. The HACCP Software must then be able to establish the appropriate critical limits, monitoring procedures and corrective actions that are appropriate for those critical control points. Finally, the software must be capable of establishing the necessary verification procedures and documentation to prove that food safety is under control at the premises.
